Homemade Granola

Granola is a simple and delicious treat.  You won't believe how wonderful your house smells as it bakes!

The recipe for granola is pretty generic.  You can change it to suit your tastes in many ways - don't be afraid to experiment!

Cooking Time

30 minutes


3 cups rolled oats

2 cups mixed nuts and seeds (any combination of sunflower seeds, pumpkin seeds, chopped walnuts, almonds, cashews, pecans, etc.)

1/2 cup shredded coconut (optional but tasty)

1 teaspoon ground cinnamon

1.5 teaspoons kosher salt

1/2 cup melted coconut oil

1/2 cup honey or maple syrup, or to taste

3/4 teaspoon vanilla or almond extract

1 cup or so dried fruit


1.  Heat the oven to 300 degrees.  In a bowl, combine all the dry ingredients - the oats, nuts and seeds, the coconut, cinnamon, and salt.  Next add the oil, sweetener and vanilla and mix well.

2.  Spread evenly on a rimmed baking sheet with parchment paper.  Set the timer for 15 minutes and then stir the granola.  Set the timer again for 15 minutes and then stir again and check.  The mixture should brown evenly; you basically want it to bake as long as possibly without burning.  After this first 30 minutes of baking it should need as much as 15 more minutes but check frequently and remove when ready.  

3.  Remove the pan from the oven and add dried fruit.  Cool on a rack, stirring occasionally while the granola reaches room temperature.  Transfer to a sealed container and store at room temperature for 7 to 10 days.  For longer shelf life store in the refrigerator but it won't last that long!
