2 large sweet potatoes or yams
2 tablespoons of melted coconut oil (you can use olive oil as well)
Fresh ground pepper
Smoked Paprika (or any other seasoning you like)
1. Preheat the oven to 375 degrees.
2. Peel the sweet potatoes and cut into even sized match sticks.
3. Toss the sweet potatoes with remaining ingredients.
4. Bake on a foil or parchment lined baking sheet for about 30 minutes turning over about half way through. The fries should be crispy on the edges and soft in the middle.
